      <image:caption>3. Meanwhile, fry the lamb mince in a separate pan. No oil needed: the fat from the lamb mince will be more than enough, and in fact that’s what we’re trying to get rid of. Don’t want that much fat in our pie!</image:caption>

      <image:caption>5. You should hit a point where there is a lot of fat being released from the mince. At that point, go ahead and drain it in a colander. Then, put the mince back until everything is brown. Usually, you should drain the fat from the mince twice. After that, you should see that most of the fat is gone.</image:caption>

      <image:caption>7. At this point, add in: A splash of tomato purée A bit of rosemary and thyme The beef stock A large amount of Worcestershire sauce. This is what will really give the pie its flavor. I’m not talking the whole bottle, but be a bit generous with how much Worcestershire sauce you put in. After adding these, mix them all together and leave to simmer on low heat for 20 minutes with a lid on. After 20 minutes, take off the lid. Then, you’ll want to start making the mashed potatoes. Luckily, I have a great recipe for that as well! Check it out here. Now, leave the lamb mince and vegetables to simmer without a lid for 25 more minutes. Make the mashed potatoes during this time. The cooking time should be around 45 minutes in total.</image:caption>

      <image:title>All - How to Make: Creamy Mashed Potatoes</image:title>
      <image:caption>2. Peel the potatoes and quarter them. If your potatoes are smaller or larger, cut them accordingly to get the same size.</image:caption>
    </image:image>

      <image:loc>https://images.squarespace-cdn.com/content/v1/5ead955331fba72bbdcc4373/1598542989700-O0L7BUUAKLXLU6LX9NM0/processed_IMG_20200824_195425.jpg</image:loc>
      <image:title>All - How to Make: Creamy Mashed Potatoes</image:title>
      <image:caption>3. Put the potatoes into a pot and fill it with cold water. As explained here, potatoes should always be started in cold water. Then, throw a bit of salt in there. Not as much as for pasta, but not nothing either. This salt will be reflected in the mashed potatoes at the end. Get the water to start boiling, then leave potatoes to cook for 20-25 minutes. They should be soft throughout at the end.</image:caption>
    </image:image>
    <image:image>
      <image:loc>https://images.squarespace-cdn.com/content/v1/5ead955331fba72bbdcc4373/1598543058145-DU7IE07HHZ5KPKFOTS4A/processed_IMG_20200824_202439.jpg</image:loc>
      <image:title>All - How to Make: Creamy Mashed Potatoes</image:title>
      <image:caption>4. While your potatoes are boiling, combine your butter and milk in a little pot, and start cooking it at very low temperature. We want the butter to melt and become liquid, and simultaneously we want some of the liquid in the milk to evaporate. As a general rule, you don’t want to “shock” the starchy potatoes with anything cold, and that’s why we heat up the milk and butter before adding it. However, be careful to keep it on very low heat.</image:caption>
    </image:image>
    <image:image>
      <image:loc>https://images.squarespace-cdn.com/content/v1/5ead955331fba72bbdcc4373/1598543025706-OH6ZY3JNPPAP2ZHQ0N8U/processed_IMG_20200824_202428.jpg</image:loc>
      <image:title>All - How to Make: Creamy Mashed Potatoes</image:title>
      <image:caption>5. Once your potatoes are done, let them let off steam in a colander. Leave them for a bit: this step is important because it releases all of the unnecessary water from the potatoes.</image:caption>
    </image:image>
    <image:image>
      <image:loc>https://images.squarespace-cdn.com/content/v1/5ead955331fba72bbdcc4373/1598543096503-1N12W6HZTRW7GTBDT84X/processed_IMG_20200824_202631.jpg</image:loc>
      <image:title>All - How to Make: Creamy Mashed Potatoes</image:title>
      <image:caption>6. Put your potatoes back in the pot and start mashing them. A potato masher works best for this but a whisk works well too. A wooden spoon will make it rather hard for you to break the potatoes down so I’d recommend avoiding it, but feel free to use what you have in your kitchen. Mash the potatoes until they’re broken down and there aren’t any big potato pieces left. However, don’t go too hard with mashing them; potatoes are actually really sensitive!</image:caption>
    </image:image>
    <image:image>
      <image:loc>https://images.squarespace-cdn.com/content/v1/5ead955331fba72bbdcc4373/1598543170908-RTKR3ZVTDC3H8MJLM9T3/processed_IMG_20200824_204553.jpg</image:loc>
      <image:title>All - How to Make: Creamy Mashed Potatoes</image:title>
      <image:caption>7. Now, add the milk and butter mixture. Add it slowly in increments. just like you would with a risotto. Make sure to mix the potatoes with a wooden spoon while you’re adding the milk and butter. Also add some salt, pepper, parsley and chives. Spring onions work well in place of chives if you don’t have them, but chives are the real MVP in this recipe. It’s amazing how well chives synergize with mashed potatoes. If you have some fresh ones, it’s the best addition possible!</image:caption>
    </image:image>
    <image:image>
      <image:loc>https://images.squarespace-cdn.com/content/v1/5ead955331fba72bbdcc4373/1598543216486-CT8DOENSCX8LAOI31RZ1/processed_IMG_20200824_204904.jpg</image:loc>

      <image:caption>Optional: Brine your chicken breast. Brining means submerging your chicken breast into lukewarm water with a generous helping of salt in it. The meat will absorb the water and salt, which results in an even juicier chicken breast at the end. Brining is a staple of food methods that can be used for most meats. In a perfect world, we could leave the chicken breast in the water for up to 3 hours, but with our busy lives, 15 minutes will do as well!</image:caption>

      <image:caption>4. Throw the chicken in the oven, and bake for 20-22 minutes. Again, unless your chicken breast is extremely large, do not leave in for longer. Not only is 20 minutes long enough, your chicken will be hot while it’s resting as well. If you want to double check the inner temperature, I suggest using or buying a meat thermometer. This is an extremely useful tool that allows you to cook your meat with great precision. After your chicken is done baking, leave to rest for at least 5 minutes, in order to allow the juices to settle. Don’t worry, it’ll still be hot!</image:caption>

      <image:caption>3. After a few minutes, add in the spices, cherry tomatoes, and throw in a splash of olive oil. This will give it that italian flavor. Keep on low heat, cover with lid, and leave to simmer for around 15 minutes. Don’t worry too much about the timing though.</image:caption>

      <image:caption>4. Meanwhile, fill a large pot with water for the spaghetti. It should be a large pot so that the spaghetti has space to spread out. Fill with a lot of salt, as is customary for pasta water. It should literally be like sea water. Do not worry about your pasta being too salty, as most of the salt will dissolve in the water.</image:caption>

      <image:caption>5. When your water is on a rolling boil (with lots of bubbles), put in the spaghetti. You will have to put the spaghetti in halfway at the start, but submerge the entire length as soon as possible by curving it when it’s soft. We don’t want half our spaghetti to be hard and the other half to be mushy.</image:caption>

      <image:title>All - How to Make: The Best Spaghetti with Tomato Sauce</image:title>
      <image:caption>6. Once the spaghetti is submerged, we want to cook it al dente. This is undoubtedly the best way to cook pasta. Why? Because the Italians say so! Check your spaghetti package for the recommended cooking time. We want to cook our spaghetti around 2 or 3 minutes less than what it says on the package. In practice, this will usually be around 7 or 8 minutes. It’s very important not to overcook our spaghetti!</image:caption>

      <image:title>All - How to Make: The Best Spaghetti with Tomato Sauce</image:title>
      <image:caption>7. During the 7 to 8 minutes that your spaghetti is boiling, check on your tomato sauce and stir it a few times. It should have a beautiful red color! This is also the time to remove the onions from the sauce. Since they've been stewing for a while now, they'll have infused their flavor into the sauce and so they've done their job. Once your spaghetti are done, put the spaghetti into a strainer, and then combine the two in a pot. It’s completely fine to put a little bit of the pasta water into the tomato sauce, in fact it’s encouraged. Pasta water is full of starch that will “fuse” your pasta with the sauce better. Works with every pasta sauce!</image:caption>

      <image:caption>3. Once the garlic, basil and pine nuts are blended into a paste, put your grated cheese into the mix and keep mixing. At this point, I don’t have any real science behind how much should cheese go in, but I’ve found that there has never been a time where I’ve added too much cheese into my pesto (I don’t even know if it’s possible to). Try tasting it at various points; if it doesn’t taste bitter and starts tasting like pesto, then you’re golden. Then, add some olive oil and mix until the pesto has a smooth texture. Keep adding oil until you reach your desired consistency.</image:caption>

      <image:caption>5. Once the potatoes are cooked, peel them quickly (even if they’re hot!) and then throw them in with the onions. Break the potatoes down roughly with a wooden spoon. Let the potatoes fry with the onions, then slowly, incrementally add the stock mixture just like you would with a risotto. You might not need all of the stock: the key is to add enough so that the color turns slightly darker and richer, but to stop before the potatoes turn into mashed potatoes.</image:caption>

      <image:caption>1. Ideally the mozzarella should actually be round but unless you have some kind of relative from Napoli who supplies you with premium mozzarella, chances are that won’t be the case. So, I cut it length-wise (I think?) so the slices have the largest surface area. Long explanation aside, cut the tomatoes into slices as well. The goal is to have the same shape for the mozzarella and tomato slices.</image:caption>

      <image:title>All - How To Make: The Perfect Caprese Salad</image:title>
      <image:caption>2. (Optional) As mentioned, if you want to impress someone, you can also create a balsamic glaze. All you have to do is pour a bit of balsamic vinegar into a pot, and put it on low heat. Do not cover. The liquid should start to evaporate a bit, and the vinegar should turn into a thicker consistency, enough to stick to your spoon. One thing, do not do what I do every time I do this and let it simmer for too long: it’ll either burn and stick to the bottom of your pan like glue or turn too solid and not liquid enough. ~5 minutes should do the trick.</image:caption>

      <image:title>All - How To Make: The Perfect Caprese Salad</image:title>
      <image:caption>3. Easy enough! You can organize your mozzarella and tomato slices any way you want to, then add the basil leaves and pesto on top. Finally, drizzle your balsamic vinegar and olive oil over the plate and you’re done!</image:caption>

      <image:caption>2. Get the rice cooking with about 1 1/2 to 2 times the amount of water. At this point you can add tons of different spices into the water to give the rice that flavor I always, always put some kind of stock cube in, and then I usually throw in some cardamom pods, one garlic clove and some cumin.</image:caption>

      <image:caption>3. Cook the rice at low temperature for around 15 to 18 minutes, but if you check and the rice has absorbed all the liquid earlier, don’t hesitate to turn the heat off! Meanwhile, cut the lemon and the spices if you haven’t already.</image:caption>

      <image:title>All - How To Make: Wild Rice Tabbouleh</image:title>
      <image:caption>4. When the rice is ready, mix it all together and it’s done! Throwing in some olive oil never hurts, and it’s easy to add more parsley or lemon if you want it to be more lemon-y or parsley-y (?). Shisha on the side is also optional but encouraged :)</image:caption>
